I stumbled across this app which seems kind of neat, and has certainly proven itself quite handy in keeping ffmpeg's CPU usage down to a reasonable amount. It detects when a process is consuming an inordinate about of CPU cycles, and reduces that process' scheduling priority in order to restore a degree of responsiveness to the system. So, when you're doing a transcode, the machine won't be as sluggish as it usually might be. Of course, the downside is that transcodes will probably take a bit longer...
I know there were other efforts by folks on the TCF thread to start pyTivo and/or ffmpeg at a reduced scheduling priority, but this seems to do the trick far more easily. You install it, run it, and watch it work its magic. It's also customizable, so you can dial in exactly what you want it to do (or NOT do). Also : it's free.
